Kale Me Please


  • Kale
  • Red onions
  • 2 cloves of garlic
  • 2 roma tomatoes – chopped
  • ¼ cup of Maeday “Carolina Legacy”
  • 2 TBSP Olive Oil


Heat oil in large nonstick pan and sauté garlic and onions until the onions are clear.  Slowly add kale and continue to add as the kale cooks down and you have more room to add more until all kale has been added.  Once kale is cooking down then add Maeday “Carolina Legacy” to kale (less or more according to taste).  Continue to cook on low heat or approximately 20 minutes until greens are tender.  Remove heat and add chopped tomatoes.

Ella Mae’s Potato Salad

Ingredients needed:

  • 5 peeled white potatoes – Boiled until tender
  • ½ red onion – chopped
  • ½ cup sweet pickles
  • 3 boiled eggs
  • 1 cup of mayonnaise – adjust as needed
  • ¼ cup of sweet pickle juice – adjust as needed
  • ¼ cup of Maeday “Carolina Royale” gourmet sauce – adjust as needed

Salt, pepper and garlic powder to taste

Cut potatoes up in a bowl and add additional ingredients and mix well.  Refrigerate at least 2 hours before serving.

A Mae’s-ing Thighs in Two Days


Day 1

  • 1 rack baby back ribs
  • Maeday Sweet Grandeur Dry Rub
  • Maeday Sweet Original Sauce
  • Mopping sauce, if desired
  • Water

Day 2

1 package (5-7) boneless chicken thighs

A-Mae’s-ing Thigh sauce (from day 1)



Day 1

Rub ribs with dry rub.  Prepare ribs as you normally would (grill, smoker, oven)

Don’t overcook.  It’s okay for the ribs to be slightly underdone because they will cook completely in the next step.

Remove ribs from heat.  Let stand 5-10 minutes.  While standing, stir a mixture of Maeday sauce and water (enough to thin sauce without making it water) in the bottom of a slow cooker.  Slice rack into section of 2-3 ribs.  Please meat side down in the sauce, cover and cook on low heat for 2-3 hours, until ribs begin to fall off the bone.  Remove ribs.  Serve.  Retain sauce rom bottom of slow cooker.  Refrigerate overnight.


Day 2

Place sauce from day 1 and thighs in heavy duty skillet.  Heat to boiling, reduce heat to low. Cover and simmer until done (20-25 minutes, turning periodically.  Serve!
